L’Agriturismo Cascina del Francés propone una cucina tradizionale, rivisitata con fantasia e originalità dal nostro chef Vanny, che ha cura di ricercare personalmente tutti gli ingredienti, in gran parte reperiti nella zona (soprattutto i salumi, i formaggi e la carne), seguendone la disponibilità stagionale (in particolare per gli ortaggi). Ne risulta una cucina genuina, attenta a riproporre sapori antichi, ma contemporaneamente aperta alla sperimentazione, soprattutto quando si tratta di creare nuovi piatti impreziositi dal tocco aromatico dei nostri vini.
È così che sono nati alcuni fra i nostri cavalli di battaglia: primo fra tutti il Risotto col moscatello rosso (Bastia Rosso), ma anche il Risotto con Bastia bianco ed Erborinato e il Risotto al Moscato di Scanzo D.O.C.G., proposto soprattutto in occasioni particolari, festività e con le giornate dei sapori scanzesi.
Ma, naturalmente, non ci si poteva limitare ai primi piatti: il tocco della Cantina Francés si può cogliere nei nostri brasati, marinati nel “Bastia” rosso, e persino nei dolci, fra cui la Torta con Moscato di Scanzo D.O.C.G. e confettura di fichi, glassata al cioccolato fondente, e i nostri cantucci, che sostituiscono al classico Vin Santo il Moscato nella preparazione.
