Their range of sheep's milk cheeses includes pecorino enriched with local ingredients and with a short aging period, up to pecorino aged for a maximum of 72 months, which fully expresses the organoleptic characteristics of the product. In addition to sheep's milk cheeses, Milk Coop also processes Podolica cow's milk, producing delicious caciocavallo cheeses that enrich the offerings of the artisan dairy. In particular, the Scamosciato Campano Caciocavallo recalls the tradition of Caciocavallo impiccato, a cheese that was once part of the meals of transhumant shepherds and travelers who, at the end of the day, roasted the caciocavallo over the fire and placed it on a slice of homemade bread.

Scamosciato pecorino bagnolese cheese, with a tender texture and delicate flavor. Available in different sizes: whole wheel of 1.2 or 2 kg, half wheel of 0.6 or 1 kg, and quarter wheel of 0.3 or 0.5 kg. It is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
Scamosciato pecorino bagnolese cheese is exclusively made from raw milk. Its peculiarity lies in its delicate and flavorful taste, accompanied by a pale straw color and a slight eye formation. It is aged for about 3 months to ensure the right balance of flavors and texture.

PRODUCTION PROCESS
The raw Malvizza sheep milk, from the pastures of Monti Picentini and Altopiano di Bagnoli in Irpinia, is artisanally transformed in the dairy of the eight farmers of the Association. Following a traditional method, the milk is heated and curdled, resulting in a curd with a soft consistency and rich in nutrients. After being shaped and pressed, the cheese wheel is placed in aging cells, where it rests for about 3 months. During this period, the scamosciato pecorino bagnolese cheese develops its delicate and flavorful taste, with a pale straw color and a slight eye formation. This is how an authentic dairy masterpiece is born, ready to delight the most demanding palates.
