Scamosciato Pecorino Bagnolese cheese with rocket, has a tender texture and a creamy and fragrant flavor. It is available in various sizes: whole wheel weighing 1.2 kg, half wheel weighing 0.6 kg, and quarter wheel weighing 0.3 kg. This is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
Scamosciato Pecorino Bagnolese cheese enriched with rocket is made exclusively from raw milk. It stands out for its creamy and aromatic flavor, with a delicate straw-colored hue and slight eye formation. It is aged for approximately 3 months.

PRODUCTION PROCESS
The raw milk from Malvizza sheep, which graze between the Picentini Mountains and the Bagnoli Plateau, arrives at the dairy of the eight farmers of the Association. After being heated to a temperature between 36°C and 40°C, the milk is curdled without the use of chemical additives. The curd takes on a soft texture, enriched with rocket. Subsequently, the curd is manually shaped and pressed to remove the whey. After a controlled aging process of approximately 3 months, the Scamosciato Pecorino Bagnolese cheese with rocket is ready to be enjoyed.
