Cous cous ingredients
  • Couscous precooked 200 g
  • Boiling vegetable broth 220 g
  • Extra virgin olive oil 10 g
  • Salt up to 1 pinch
Seasoning ingredients
  • Chicken breast 800 g
  • Zucchini 200 g
  • Red peppers 100 g
  • Carrots 140 g
  • Peas 100 g
  • Small red onion 1
  • Black pepper to taste
  • Salt up to taste
  • Sweet paprika to taste
  • Vegetable broth to taste
  • Extra virgin olive oil to taste
  • Lemon zest 1
Procedure

Peel the carrots and cut them into cubes. Do the same thing with the zucchini. Take the pepper, remove the stalk and open it in half by removing the inner part and the seeds. Also cut this into cubes. Clean and slice the onion. Cut the chicken into small pieces and brown it in a pan with olive oil, season with salt and pepper and add a pinch of sweet paprika. Cook for about 6 minutes, until a golden crust forms. Remove the chicken from the pan and put the onion, carrots, peppers, courgettes and peas in it. Cook for about 5-6 minutes adding some vegetable broth. Continuing, prepare the couscous, put it in a bowl with salt, oil and boiling broth, cover and wait for the couscous to expand. (about 5 minutes). Wait until the vegetables, chicken and couscous are cold and pour them into a large bowl, finally flavored with the lemon zest.
