The Legend of Tiramisu: A Recipe for Eternity

Once upon a time there was a count from northern Italy who had a very sophisticated palate and a sweet tooth. One day, his cook presented him with a delicious cake made with ladyfingers soaked in coffee and marsala, mascarpone, eggs and sugar. The count was so impressed with this dessert that he asked for it for his next reception.

The name of the dessert? Tiramisu, which is Italian for “pull me up,” or “lift me up.” And it really lifted the palates of diners, soon becoming one of Italy’s most beloved desserts.

Today, the original tiramisu recipe is still faithfully followed, and every kitchen that prepares it tells its own version of the legend. But one thing is certain: this silky texture and intense flavor cake will always be a hit.
Here is how to make Tiramisu the old-fashioned way:

Ingredients:

250g of ladyfingers
4 egg yolks
100g sugar
500g mascarpone cheese
250ml of coffee
4 tablespoons of marsala
bitter cocoa powder for dusting

Procedure:

1 – In a bowl, beat the egg yolks with the sugar until light and fluffy.
2 – Add the mascarpone and mix until smooth.
3 – Prepare the coffee and mix it with the marsala.
4 – Wet the ladyfingers in coffee and arrange them in layers.
5 – Cover the ladyfingers with the mascarpone cream, leveling it with a spatula.
6 – Repeat until all ingredients are finished, ending with a layer of cream.
7 – Dust with unsweetened cocoa powder and place the tiramisu in the refrigerator for at least 2 hours.
8 – When the tiramisu is well chilled, cut it into portions and serve with an extra dusting of bitter cocoa powder and a mint leaf for decoration.

This is old-fashioned tiramisu, the same recipe that Grandma Maria’s grandmother made for the count so many years ago. Every time you prepare it, you will feel transported back in time to a time when flavors were simple but authentic. Enjoy your meal!
