Bolognese meat sauce
Ingredients
  • 500g of ground beef
  • 1 onion, finely chopped
  • 2 finely chopped carrots
  • 2 finely chopped celery ribs
  • 4 cloves of garlic finely chopped
  • 1 glass of red wine
  • 1 can of tomato pulp
  • 1 teaspoon of tomato paste
  • 1 tablespoon of sugar
  • salt and pepper to taste.
  • extra virgin olive oil q.b.
  • 500g egg pasta (pappardelle or tagliatelle)
  • grated parmesan cheese for serving
Procedure
  1. In a large pot, heat some extra virgin olive oil and add the onion, carrots and celery. Fry for about 10 minutes until soft.
  2. Add garlic and sauté for an additional minute.
  3. Add the ground meat and cook over medium-high heat, stirring occasionally, until well cooked.
  4. Deglaze with red wine and let it evaporate.
  5. Add tomato pulp, tomato paste, sugar, salt and pepper. Stir well.
  6. Lower the heat and simmer for about 2 hours, stirring occasionally, until the sauce is thick and flavorful.
  7. Meanwhile, cook the pasta in plenty of salted water.
  8. Drain the pasta al dente and toss it with the Bolognese meat sauce.
  9. Serve hot with a generous grating of Parmesan cheese.
