Butter cream ingredients
  • 250 g of butter at room temperature
  • 125 g of granulated or icing sugar
  • 70 g of egg yolks
  • 35 g of water
  • 6 g of clear fluid honey
  • 1/2 vanilla bean
Procedure

Work the egg yolks with the sugar and vanilla with a whisk. In the meantime, prepare the syrup by putting the water, sugar and honey in a pan weighing them at about 120 °, at this point pour it into the previously prepared mixture while continuing to mix. When it is lukewarm, add the butter little by little and mix well.
