Ingredients

For the jam
200 g of fresh strawberries
80 g of ointment butter
250 g of powdered sugar

For the dough
The juice of one lemon
150 g of butter
150 g of sugar
3 eggs
150 g of flour
1/2 sachet of baking powder

Procedure

To prepare our lemon and strawberry cupcakes we start by cleaning the latter and coarsely cutting them to then pass them in the mixer so as to obtain a wonderful coulis. We continue by putting it in a saucepan and cook it over low heat until the liquid is reduced to 2-3 tablespoons. Let’s let it cool down.
We continue the preparation of our cupcakes, whip the butter softened with the sugar and add one egg at a time. We then combine the sifted flour and baking powder. We add the juice of one lemon and mix well. Fill the cups (1 generous spoonful of dough) and bake for 20 minutes at 180 ° C for 20 minutes
In the meantime, whisk the butter and 100 g of powdered sugar, when it is frothy, add the cold strawberry coulis, continue to whisk and add the remaining sugar. We put the mixture in a pastry bag and now we can decorate our lemon cupcakes.
