The aged pecorino bagnolese cheese has a granular texture that crumbles when cut. Its flavor is characterized by an intense and distinct intensity, with persistent spicy notes. CHARACTERISTICS
The aged pecorino bagnolese cheese is exclusively made from raw milk. Its thick crust, resulting from long aging, is extremely hard and protective, preserving its sensory qualities without the need for additional treatments. Inside, the cheese has a crumbly texture. Its flavor is intense and bold, characterized by persistent spicy notes. The aging of this pecorino cheese ranges from 36 to 72 months.

PRODUCTION PROCESS
The raw Malvizza sheep milk from the pastures of Monti Picentini and Altopiano di Bagnoli is brought to the dairy by the Association's farmers. After being heated, the milk is curdled without any chemical additives. The curd, with a pasty consistency, is shaped and pressed by hand to remove the whey. Subsequently, the cheese is aged in controlled cells for 36-72 months, developing complex flavors.
