Ingredients
  • 400g of short pasta (e.g., ditalini or mezze penne)
  • 400g canned borlotti beans (or, dried beans soaked for at least 8 hours and then cooked in plenty of salted water)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 celery ribs, diced
  • 2 medium carrots, diced
  • 1 liter of vegetable broth (or water)
  • 1 bay leaf
  • 2 tablespoons of extra virgin olive oil
  • Salt and freshly ground black pepper, to taste.
Procedure

Hi friends, today I want to share with you my favorite pasta and beans recipe, a warm and comforting Italian dish perfect for winter.

Here is the list of ingredients for 4-6 people:

  • 400g of short pasta (e.g., ditalini or mezze penne)
  • 400g canned borlotti beans (or, dried beans soaked for at least 8 hours and then cooked in plenty of salted water)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 2 celery ribs, diced
  • 2 medium carrots, diced
  • 1 liter of vegetable broth (or water)
  • 1 bay leaf
  • 2 tablespoons of extra virgin olive oil
  • Salt and freshly ground black pepper, to taste.

Here is how to prepare pasta and beans:

  1. In a large pot, heat extra virgin olive oil over medium heat. Add the onion, garlic, celery and carrots and cook for about 5 minutes, stirring occasionally.
  2. Add the beans (with their liquid if they are canned), bay leaf and vegetable broth (or water). Bring to a boil, lower the heat and cook for about 20 minutes, until the vegetables are tender.
  3. Meanwhile, in another pot, cook pasta in plenty of salted water following the instructions on the package. Drain the pasta al dente and add it to the pot with the bean sauce.
  4. Mix pasta and beans well, adjust salt and freshly ground black pepper to taste. Serve hot with a drizzle of raw extra virgin olive oil.
