CHARACTERISTICS
Pecorino Bagnolese cheese with walnuts is made exclusively from raw milk. It has a delicate and creamy taste with a slight eye formation, while the walnuts add a pleasant crunch. It is aged for approximately 3 months.

PRODUCTION PROCESS
The raw milk from Malvizza sheep, typical of the pastures in Irpinia, is processed at the dairy by the association's farmers. After being heated, the milk is coagulated with natural rennet, forming the curd. The resulting curd is enriched with local walnuts and shaped into molds. After being pressed and hand-turned, the cheese is aged for about 3 months in dedicated cellars. It is an authentic combination of local flavors.
