Aged Bagnolese Pecorino cheese with rosemary, characterized by an intense and persistent flavor. It is available in various sizes: whole wheel weighing 1.8 kg, half wheel weighing 0.9 kg, and quarter wheel weighing 0.45 kg. This is an artisanal product, so the weight may vary slightly.

CHARACTERISTICS
Aged Bagnolese Pecorino cheese with rosemary is exclusively made from raw milk. The production of this cheese follows rural traditions, with the master cheesemaker skillfully creating this delicacy. The cheese has a semi-hard texture, a flaky structure, and an intense and persistent taste. The rosemary, with its Mediterranean aromatic notes, gives the cheese a fresh and balsamic flavor.

PRODUCTION PROCESS
The raw milk from Malvizza sheep, typical of the pastures in Irpinia, is brought to the dairy by the eight farmers of the Association. After being heated to temperatures between 36°C and 40°C, the milk is coagulated with traditional rennet, without the use of chemical additives. The resulting curd has a soft consistency that retains the nutritional values of the milk. Subsequently, the curd is broken and transferred to molds to give it the desired shape. After being hand-pressed to remove excess whey, the cheese is completely covered with extra virgin olive oil and freshly harvested rosemary. Finally, it is left to age for a period ranging from 8 to 15 months.
