CHARACTERISTICS
Aged pecorino bagnolese cheese with Taurasi wine is made exclusively with raw milk. Its rind has a striking purple color derived from immersion in wine. The semi-hard and slightly moist paste is perfect for slicing. The flavor is robust and characteristic of pecorino, while the aroma is intense and satisfying. Thanks to the aging process in Taurasi red wine, this cheese acquires aromatic notes that further enhance its taste.

PRODUCTION PROCESS
Raw sheep milk from Malvizza, sourced from the pastures of the Monti Picentini and Altopiano di Bagnoli areas in Irpinia, is brought to the dairy by the Association's breeders. Following a traditional method without the use of chemical additives, the milk is heated, and rennet is added to form the curd. After breaking and shaping it in the molds, the cheese is hand-pressed to remove the whey. Subsequently, it undergoes controlled aging and is salted. During this phase, the cheese is immersed in Taurasi wine, giving it a characteristic purple color and an enriched taste. After a maturation period of approximately 8 months, the cheese is ready to be enjoyed.
